Rector’s on Broadway was a trendy restaurant in the theater district in New York City at the turn of the century and was frequented by celebrities, Wall Street gurus and socialites. Rector's originated the "get 'em out quick" dishes that were favorites of the Broadway crowd who relied on tempting dishes served quickly in order to meet the theaters' strict curtain calls. The restaurant closed with the coming of prohibition, but the proprietor, George Rector, opened a new hotel restaurant, Frontier House, in Lewiston (near Niagara Falls) soon after, taking all his recipes to the new restaurant.

    sliced button or cremini mushrooms
  • 2 Tbsp
    butter, divided
  • 2
    thin cube steaks (sometimes called minute steaks or sandwich steaks)
  • 1 tsp
    salt, or to taste
  • 1 tsp
    black pepper, or to taste

How To Make new york minute steak

    In a small skillet, heat the mushrooms with 1 Tbsp butter until the mushrooms are heated through, about 5 minutes.

    In a separate skillet, melt the remaining butter and fry the steaks, one to two minutes per side, or as desired.

    Season steaks with salt and pepper, and serve immediately, topped with the sautéed mushrooms.
