This can be an appetizer or an entree, your choice. Very easy to prepare and have on the table in under 30 minutes. We found this recipe a welcome change from the same old routine. These fritters are even good cold as a snack. I hope you like this humble recipe. Enjoy!

Ingredients For bonnie's fishy fritters

  • 15 ounces cod fish, about 3 frozen or fresh fillets.
  • 1/4 cup plus 1 teaspoon all purpose flour
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon sazon seasoning
  • 1/2 teaspoon coarse ground pepper
  • 1/4 teaspoon salt or more to taste
  • 1/2 teaspoon baking powder
  • 1/4 cup water
  • 1 beaten egg
  • grapeseed oil for frying

How To Make bonnie's fishy fritters

    Place the sealed packets of cod in fridge to thaw. or place them under cold water in the sink until about 30 minutes to thaw. Use a sharp knife and dice the cod into small uniform pieces, about 1/2 inch size. Drain on paper towels, blot to remove excess moisture.

    Whisk the flour, baking powder, garlic powder, onion powder, Sazon seasoning, salt and pepper in a mixing bowl .Add the beaten egg to the water to make a batter that will coat the fish. Similar to a pancake batter. You may have to adjust the water amount slightly. Add the fish and coat thoroughly. There will be more fish than batter.

    Heat grapeseed oil, about an inch in depth in a nonstick skillet. Cook one fritter to get a feel of how long it takes to cook the fish fritters.(This also allows you to add more salt or seasoning if needed) It usually takes about 4 or 5 minutes for each side. The fish should be firm, not mushy. Drop the fish mixture by tablespoons into the hot oil. Flatten slightly. Give them space to puff up. Turn when they are brown and then brown the other side . Drain Fritters on paper towels.

    Serve immediately with a nice dipping sauce of your choice. I like Ranch dressing. Hubby likes cocktail sauce. Enjoy! Store cooled leftovers in a ziplock bag in the fridge. They are even good cold for a snack.

    Most of the Sazon mixes from the store contain msg. You can make your own at home without all the additives store-bought products contain. Home made Sazon seasoning mix: Ingredients 1 TBS Ground Coriander 1 TBS Ground Cumin 1 TBS Ground Annatto or 1 ½ tsp EACH: turmeric and sweet paprika 1 TBS Garlic Powder 1 TBS Kosher Salt 2 tsp Oregano 1 tsp Onion Powder 1 tsp Ground Black Pepper OPTIONAL: ¼ tsp Cayenne Instructions In a small bowl, combine all ingredients and mix well. Transfer to an airtight container and store in a dry place.
