comfort essentials: grilled cheese and pickles

This is an easy one to cobble together and is excellent with a few chips on a warm Summer’s evening, and a nice cold larger. Served these yesterday evening as a simple dinner on a rainy evening. We relaxed outside and chatted as the rain softly drummed on the roof of the pergola. So, you ready… Let’s get into the kitchen.

Ingredients For comfort essentials: grilled cheese and pickles

  • PLAN/PURCHASE
  • 2 Tbsp
    mayonnaise, plain variety, i prefer dukes’
  • 1 Tbsp
    hot sauce, i prefer franks’
  • 2 slice
    sandwich bread, your choice, slightly toasted
  • 2 oz
    shredded cheese, i prefer sharp cheddar
  • 1 - 2 pinch
    hungarian paprika
  • 1 md
    dill pickle, thinly sliced

How To Make comfort essentials: grilled cheese and pickles

    PREP/PREPARE

    Besides the ingredients, all you need for the recipe is a skillet, and a good appetite.

    Gather your ingredients (mise en place).
  • 4
    Mix the mayonnaise and hot sauce together and brush some on one side of a slice of slightly toasted bread.

    Place the bread, mayo-side-down, into a skillet over medium low heat, and add the cheese.

    Sprinkle with a bit of paprika.

    Add the pickles.

    Top with the other slice of bread, and brush on the remainder of the mayo/hot sauce mixture.

    After 2 – 3 minutes flip and allow to cook on the other side for 2 – 3 minutes.
