Ingredients For chili cornbread sloppy "joes"

  • 1 pkg
    cornbread mix - 8 1/2 oz.
  • 1
    egg
  • 1/3 c
    sour cream, light
  • 1 can
    prepared chili - with or without beans
  • 1 can
    corn - 14 oz approximately - drained
  • 1 c
    cheddar cheese, shredded

How To Make chili cornbread sloppy "joes"

    Prepare cornbread mix with egg and sour cream. Spread in greased 8x8 inch pan and bake for 15-20 minutes at 400ºF. Let cool for 10 minutes.

    Remove cornbread and cut into 4 squares. Cut each square into a triangle, then split each triangle horizontally into halves.

    Meanwhile, cook chili and corn in saucepan until completely heated.

    To serve: spoon chili mixture onto bottom half of cornbread triangle, sprinkle with cheese, top with remaining cornbread triangle.
