This is one of our favorite meals. It is delicious and is a wonderful meal to serve to family and guests. When you are busy this can be your "go to" meal. Because the tortellinis cook up so fast it is a really quick meal to make. Now, if you want you can use fresh red peppers and saute them with the onions. I just happen to love roasted red's and that's why I use them. The little bit of bacon, a few shakes of additional cheese and basil added on top makes it complete. Ingredients For tortellini's w/ham & roasted red's

  • 1 pkg
    tortellini, meat or cheese stuffed
  • 1 jar
    roasted red peppers, 12 oz.
  • 10-12 oz
    boneless smoked ham, diced
  • 1/2 md
    onions, yellow, diced
  • 1/2 c
    peas, frozen
  • 4 clove
    garlic, minced
  • LIGHTER WHITE SAUCE
  • 1/4 stick
    butter
  • 1 c
    whipping cream or half & half
  • 3/4 c
    parmesan & romano cheese, shredded
  • pepper
  • GARNISH
  • 4 slice
    bacon, crumbled
  • basil, fresh, chopped
  • parmesan & romano cheese

How To Make tortellini's w/ham & roasted red's

    Prep your items. Slice up your ham, (if using a ham steak) roasted red's, garlic & onions. This is a great meal to use up leftover ham.

    Fry up 4 slices of bacon and then crumble when cool. Add your onions and saute for about 10 minutes. Add your garlic, ham and your sliced roasted red's. Stir in pan until nice and hot.

    Prepare your sauce in a saucepan. Add your butter and melt it down on medium heat. Then, add your whipping cream and cheeses. Stir often about 10 - 15 minutes and keep on low to medium heat until cheese is completely melted. [This should be enough sauce to coat the tortellinis.]

    Now, you are ready to assemble your dish.

    While your onions are almost done boil your water for tortellini's. They only take about 5 - 10 minutes depending on what tortellini's that you use.

    When you drain pasta immediately place in bowl and pour your sauce over them and add your cracked pepper to your liking.

    Add the remaining ingredients on top of pasta and garnish with crumbled bacon and chopped basil. It is ready to serve with some buttered garlic bread.

    April 3rd, 2013 -- I had some delicious leftover ham from Easter and knew this was a dish I wanted to prepare with it. So easy to make and a very satisfying dish for the family. This time I added some sweet peas to the dish too.

    Nov. 15th, 2014 --- Fixed this meal up for dinner tonight and it was perfect for our first snowy night of the season.
