This dish is packed with flavor!! It can be made low calorie by using Margarine and artificial sweetener or hotter by adding more Ancho Chili. I cooked this in a wok! Whatever your heart desires!

Ingredients For spanish pork

  • 2 lb
    boneless pork loin fat removed and cubed
  • 1 Tbsp
    butter
  • 1 lg
    onion diced
  • 1
    ancho chili in adobo sauce seeded and chopped
  • 1 c
    bell pepper diced ( any color )
  • 1 c
    celery diced
  • 16 oz
    can diced fire roasted tomatoes
  • 1 Tbsp
    minced garlic
  • 1/2 tsp
    chili powder
  • 3/4 c
    water
  • salt and pepper to taste
  • 2 Tbsp
    sugar
  • cornstarch ( optional )

How To Make spanish pork

  • 1
    Melt butter in a large fry pan and brown the pork
  • 2
    Push pork to one side, add onion and garlic Saute' until tender
  • 3
    Mix onion and pork together
  • 4
    Add the can of tomatoes, water, celery, bell pepper, ancho chili, salt and pepper
  • 5
    Stir, cover and simmer 45 minutes or until pork is tender
  • 6
    Before serving stir in 2 Tbls sugar or more to taste

    Thicken with Cornstarch to your liking

    Serve over rice
