Shrimp Oliette

This is a variation of Spaghetti Oliette, which was handed down through my husband's Italian family to mean 'spaghetti with olive oil'. We usually make this as a side dish with olive oil, garlic & seasonings. I've added shrimp, sausage & broccoli to make a delicious light meal!

Don't let the instructions scare you off! It really is not hard at all. It's just that this recipe utilizes a couple of pots & colanders, and a skillet to cook each part.

    frozen shrimp, peeled & de-veined

    broccoli, fresh, chopped
  • 2
    links italian sweet sausage
  • 1/2
    red onion, diced
  • 6 clove
    garlic, minced
  • 3/4 lb
    thin spaghetti
  • 1/2 tsp
    old bay seasoning
  • 1/2 stick
    or more of butter
  • 1 tsp
    oregano, dried
  • 1 tsp
    basil, dried
  • 1 tsp
    garlic powder
  • ·
    red pepper flakes
  • ·
    olive oil, extra virgin

How to Make Shrimp Oliette


  1. In a medium pot, add about 1-2 cups of water, 2 tablespoons of butter, old bay seasoning and a bit of garlic powder (I use Adobo brand).
  2. Using a colander & a lid over the pot of water, steam frozen shrimp until pink. Set aside to cool a bit. Save water to cook the spaghetti in.
  3. In another medium pot add 1-2 cups of water with 4 tablespoons of butter.
  4. Using a colander & a lid, steam the broccoli until bright green.
  5. While the shrimp & broccoli are steaming, saute the red onion in a skillet with a little olive oil until the onions are translucent. Add the minced garlic and saute 1-2 minutes.
  6. Add the crumbled sausage and cook until no longer pink. Drain.
  7. In the pot of shrimp water, add enough water to cook the spaghetti until just tender. Drain.
  8. While the spaghetti is cooking, peel the shrimp & remove the tails.
  9. In a large bowl, add the cooked spaghetti. Drizzle liberally with olive oil, and add the seasonings. Toss until well coated.
  10. Sprinkle with a bit of red pepper flakes.
  11. Add the sausage mixture and the broccoli. Toss well.
  12. Serve the spaghetti oliette mixture, and top each serving with several shrimp.
  13. Enjoy.
