Ok y'all these chops....oh boy.....THESE CHOPS! I stumbled upon success with these guys! Doing my yearly fridge/freezer/pantry purge and had chops expiring soon and 'maters needed used and just decided to throw it all together and I love sage with tomatoes so that got threw in and then the garlic and onion and the bacon well y'all we all know if its bacon it's gonna' be GOOD lol They just pack a punch of flavor that some how makes the universe seem right lol And making it all in 1 pan in the oven makes these even more lovable! I have not altered these chops since day one around 25 years ago

Ingredients For sage 'mater chops (tomato pork chops)

  • 6
    pork ribeyes (cuttlets) or what chop you like best
  • 1 can
    diced tomatoes (i use a 16oz jar of home canned tomatoes but use regular 14.5 oz size can)
  • 2 tsp
    sage or poultry seasoning (more for a bolder flavor)
  • 2 tsp
    garlic powder
  • 2 tsp
    onion powder
  • salt and pepper to taste
  • 8 slice
    uncooked bacon
  • ***the pictures show 4 chops but i use 6 most times but tonight it was just me and hubby :)

How To Make sage 'mater chops (tomato pork chops)

    Pre-heat oven to 400 degrees

    Spray baking dish with non stick cooking spray

    Line pork chops in dish overlapping top of chop to bottom of chop.

    Pour tomatoes over chops
  • 5
    Sprinkle with Sage (or poultry seasoning) Garlic, Onion Powder, Salt and Pepper

    Place strips of UNCOOKED bacon in a single layer over the top.

    Bake in oven for 45 mins or until bacon has started crisping up some. (the bacon will not get all the way crispy but the way it does cook is just right for this dish)

    ***PLEASE***PLEASE***PLEASE*** Look over my wonkey Bacon! lol I have been canning green beans (first picking still got 2 more pickings to can) and it is ends and pieces that I put into the jars to season my green beans with when I can em'! I needed to use it up so that was the bacon on the menu Ends & Pieces!
