  • 1 lb
cubed pork shoulder, butte or country rib
  • 5 clove
    garlic cleaned and minced
  • 3
    bay leaves, dried
  • 1 c
    water
  • 1/2 c

  • 1/2 c
    white vinegar
  • 5 to 6
whole peppercorns + a few more crushed

How To Make pork adobo

  • Rub pork with oil and season with salt and cracked ground pepper.
    1
preheat oven to 400° Rub pork with a little oil Season with salt and pepper Roast for 20 minutes
  • Pot is boiling for 20 minutes.
    2
Remove pork from oven Place all ingredients in a good size pot Bring to a boil, let it boil for 20 minutes Keep your eye on the pot. Turn the heat to simmer, cover and cook until meat is tender, turn the stove to low and stir frequently until most of the liquid evaporates. I let it go for about 45 minutes adding a little water. My stoves cooks HOT! At this time you can add 2 teaspoons of sugar and blend with the meat. I recommend it.
