This is an excellent way to use up left overs from your St. Patrick's Day Feast! We have also made this with some left over mashed potatoes as a topping! This is easy and very tasty! I love to Play With My Food! Happy St. Patrick's Day! xo *** when you are in the mood for this pizza and don't have left over cornned beef.... you can subtitute deli corned beef or canned corned beef hash! xo Play With Your Food! xo

Ingredients For irish colleen pizza !

  • PIZZA CRUST:
  • 1 lg
    loaf dark rye bread (cut into 2 or 3 rounds)
  • SAUCE:
  • 1 lg
    bottle thousand island salad dressing.
  • TOPPINGS:
  • 1 sm
    (14 ounce) can sauerkraut (drained and squeezed)
  • 1 c
    corned beef (left overs) (chopped)
  • 1 c
    ham (left overs) (chopped)
  • 8 oz
    swiss cheese (shredded)
  • 8 oz
    mazzarella (shredded)
  • OPTIONAL:
  • 1 tsp
    horseradish (mixed in with the thousand island)

How To Make irish colleen pizza !

    Preheat oven to 375 degrees

    Either make or buy a large round loaf of dark rye bread. Cut in in half cross-wise to form two rounds (or cut into thirds to make three rounds).

    If you are using horseradish, add it in a bowl to your Thousand Island Dressing. If you are not adding it... then you can pour the dressing out from the bottle. Put enough dressing on the two rounds of bread to cover it like you would with a pizza sauce. *** If you don't have thousand island dressing make your own by: Mayonnaise, ketchup and sweet pickle relish to taste and color.
  • Rye bread, thousand island dressing (homemade), saurkrout

    Sprinkle sauerkraut all over the dressing/sauce.
  • Rye bread, thousand island dressing, sauerkraut, ham and corned beef.

    Sprinkle the ham and the corned beef on top of the sauerkraut layer.

    Sprinkle the mozzarella and then the Swiss Cheese all over the top of both pizzas.

    Bake for 12 - 15 minutes, or until the cheeses are melted and a little golden.

    Cut like you would any pizza.
