Fried Pork Chops

Nicole Bredeweg

I give full credit to America's Test Kitchen for this simple, and delicious, recipe. But, unfortunately, I was just watching a video with no access to the recipe, so I quick jotted down some notes. My husband fears ATK recipes -- he thinks that they are too complex (since I insist on following them to the letter). Having said that, he LOVED this recipe. So much so that it's requested again and again!

1 Tbsp

How to Make Fried Pork Chops

  • 1Make two slices in fat ridge -- this will help keep the meat from bowing.
  • 2Sprinkle seasoning mix directly on pork chops, both sides. Immediately dredge through flour, shaking off loose flour. Set aside for ten minutes.
  • 3About halfway through the wait period, heat lard and oil over medium-high heat. Once the oil mix is shimmering, re-dredge the chops through the flour again.
  • 4Fry for 3 - 4 minutes per side.
  • 5Let sit for a few minutes before serving.
