Fried Pork Chops

Nicole Bredeweg

I give full credit to America's Test Kitchen for this simple, and delicious, recipe. But, unfortunately, I was just watching a video with no access to the recipe, so I quick jotted down some notes. My husband fears ATK recipes -- he thinks that they are too complex (since I insist on following them to the letter). Having said that, he LOVED this recipe. So much so that it's requested again and again!

How to Make Fried Pork Chops

  1. Make two slices in fat ridge -- this will help keep the meat from bowing.
  2. Sprinkle seasoning mix directly on pork chops, both sides. Immediately dredge through flour, shaking off loose flour. Set aside for ten minutes.
  3. About halfway through the wait period, heat lard and oil over medium-high heat. Once the oil mix is shimmering, re-dredge the chops through the flour again.
  4. Fry for 3 - 4 minutes per side.
  5. Let sit for a few minutes before serving.
