Watched the Super Bowl yesterday and was so distraught at KC's performance that I could not go to bed. So, I pulled an all-nighter in the kitchen. Towards morning, I had developed this recipe. Tender pork with an awesome flavor, worthy of a second helping. So, you ready… Let’s get into the kitchen.

Ingredients For cold weather essentials: sassy pork & rice

  • PLAN/PURCHASE
  • 1 1/2 lb
    pork tenderloin
  • THE MARINADE
  • 1 Tbsp
    sriracha, or hot chili sauce
  • 1 Tbsp
    tamari sauce, or liquid aminos
  • 1 tsp
    rice wine vinegar, unflavored
  • 1/4 tsp
    white pepper, freshly ground
  • 1/4 tsp
    salt, kosher variety, fine grind
  • THE SAUCE
  • 3 Tbsp
    sriracha, or hot chili sauce
  • 2 Tbsp
    tamari sauce, or liquid aminos
  • 1 Tbsp
    ketchup
  • 1 Tbsp
    coconut sugar
  • 1/2 tsp
    toasted sesame oil
  • 1/2 tsp
    ginger powder
  • ADDITIONAL ITEMS
  • 2 clove
    garlic, minced
  • toasted sesame oil, for cooking
  • grapeseed oil, or other non-flavored oil, for cooking
  • steamed white or brown rice

    You will need a skillet big enough to hold all of the ingredients to make this recipe.

    Gather your ingredients (mise en place).

    Cut the tenderloin into bite size cubes or strips.

    THE MARINADE

    Whisk all the marinade ingredients together.

    Take a Ziploc bag or non-reactive container that can be covered, and add the pork with the marinade, then mix to thoroughly coat the pork.

    Place in fridge for 4 – 6 hours.

    THE SAUCE

    About an hour or so before removing the pork from the fridge, mix the sauce ingredients together, and reserve.

    THE COOKING

    Cook the rice according to package directions.

    While the rice is cooking, remove the pork from the fridge.

    Add about two tablespoons of grapeseed oil and 1 tablespoon of toasted sesame oil to a skillet over medium heat.

    Add the 2 cloves of minced garlic to the pan, and sauté until fragrant, about 60 seconds.

    Shake off the excess marinade from the pork and add to the pan.

    You do not want to crowd the pan, so you may have to do this in batches. Once one batch is finished, reserve in a bowl, and do another batch until all the pork has been browned. You want the pork to brown and begin to crisp.

    Return all the pork to the skillet and add the reserved sauce.

    Simmer, until the sauce thickens, about 4 – 6 minutes.
