In our neighborhood we have a neighbor who loves throwing this chili cookoff every fall. It's a great time and alot of fun. Everyone puts together their favorite recipe and we all get together and try the various chili's. This is my 5th year and I have worked hard at developing the right balance of flavors. I think it's a winner we shall find out soon. In the meantime. I can't keep my ladel out of the pot and dipping myself cupfuls of this tasty treasure with a few secret ingredients.

Ingredients For chili cookoff for a crowd

  • 3 lb
    ground beef 80/20
  • 1 lb
    pork sausage
  • 28 oz
    tomatoes, canned with green chiles + 1 can of water
  • 2 can
    15 oz. chili style beans
  • 1 oz
    mexican chocolate chopped (ibarra brand)
  • 2 c
    day old coffee
  • 1 md
    green pepper, diced
  • 1 sm
    onion, diced
  • 1 tsp
    cumino (cumin powder)
  • 1 Tbsp
    garlic powder
  • 2 Tbsp
    mexican chili powder
  • 1
    envelope of mccormick chili seasoning packet
  • salt to taste
  • pepper to taste
  • fritos (garnish)
  • sour cream (garnish)
  • cheese (garnish)

How To Make chili cookoff for a crowd

    Brown both meats seasoning with garlic powder, salt and pepper and drain any grease.

    Next combine all ingredients in a large pot and bring to a boil. Once at bowl stage drop temp down and simmer for 3 hours on low.

    It's best to make a day before an event. It tastes better the longer the flavors are able to meld together. If it's to spicy for your taste simply just used diced tomatoes rather than with the green chiles.

    Great to garnish with fritos, sourcream, and cheese. Myself I like it just as it is.
