I grew up in the Nevada Dessert surrounded by Mesquite Trees so we always had fresh Mesquite Wood BBQ's. I don't really BBQ at all unless it is with a Mesquite Wood or Mesquite Charcoal. So now that I am older I find it hard to gnaw on just the BBQ Ribs & I find I want the meat to be soft & easy to chew. That is how I came up with this recipe. When transferring the ribs from the grill to the Crockpot I needed to add liquid to my Crockpot because I am afraid of Cooking in it without liquid and ruining it. So I came up with the idea to add Beer to the Sauce & finish with a Slow Crockpot BBQ

Ingredients For bbq blackend mesquite double cooked beer ribs

  • 1/2
    rack of ribs
  • mesquite wood charcoals
  • 3 Tbsp
    italian salad dressing
  • 1 tsp
    adolph's meat tenderizer
  • pepper
  • garlic powder
  • homemade bbq sauce or bullseye seasoned with garlic
  • beer

How To Make bbq blackend mesquite double cooked beer ribs

    Season Ribs with Adolph's Meat Tenderizer, Pepper and Garlic Powder. Put in a large plastic ziploc bag and add 3 tablespoons Zesty Italian Salad Dressing like Good Seasons or Bernstein's salad dressings to the bag to marinate the ribs in for about 3 hrs. Make sure to turn the bag every so often while marinating.
  • Mesquite BBQ Ribs Blackening and Charring the BBQ Sauce

    Get your Mesquite Coals ready they have to be Mesquite to get the flavor or it won't be Mesquite. When the coals are ready BBQ the ribs Twice on each side first to brown each side then second to Blackend. On the second turning of the ribs make sure you add a layer of BBQ Sauce to each side so it Blackens along with the meat for a BBQ Sauce Char. BBQ the Ribs for about 45 min depending on how thick your slab is. You want them to be Nicely Charred with a Blacked Surface but yet you still want them to remain Juicy so cook them but do not over cook them. If they get to done they could become dry. I only cook the ribs so that they remain juicy inside then remove them.
  • BBQ Mesquite BBQ Ribs in a CrockPot with the BBQ Sauce and Beer.

    After you remove the ribs put them in the CrockPot and make a BBQ Beer Sauce with the remaining BBQ sauce you have. I usually add about 1/2 cup of BBQ Sauce and 1/2 cup of Beer to the BBQ Ribs. Cook the Ribs on low for about 3-4 hours or until the ribs easily come apart and the meat pulls away from the bone.
  • Pouring beer into my jar of homemade BBQ Sauce to add to the crockpot after mixing together.

    Make the BBQ Beer Sauce by adding 1/2 to 3/4 Cup Beer to your jar of approx 1 cup of homemade sauce, mix then pour into the crockpot.
  • Double Cooked Porked Ribs Served On A Roll With BBQ Dipping Sauce and A Dill Potato Salad.

    Enjoy your BBQ Blackened Mesquite Double Cooked Beer Ribs with a nice mustard or dill potato salad & some BBQ Beans. Serve on a Roll with a BBQ Dipping Sauce on the Side to dip the sandwich in.

    You can make a BBQ Dipping Sauce by adding a little of the juice from the crockpot to the BBQ sauce and mixing it together and heating it in the microwave. Make sure it is thin like a dipping sauce or you can just use water. I use water because I don't want the grease.
  • This is 1/3 of a slab of Pork Ribs after being Mesquite BBQ'd Blackened on a grill and slowly cooked in a Beer BBQ Sauce  for 3 1/2 hour in a CrockPot.

    This is what the ribs look like after 3 1/2 hours in the crockpot. Just lift the ribs out of the grease and slice into individual ribs. Discard the grease in the crockpot. You will probably cookout about 1 1/2 cups of grease out of the ribs which is fantastic for your health.
