Today I was going through my "junk" drawer looking for a specific recipe for my husband's cousin's meatloaf. Never did find it but I did find this recipe and made it for Sunday dinner with mashed potatoes and green beans.

Ingredients

1 pkg
boneless pork loin (4-6 lbs)
4-6 slice
bacon

RUB MIXTURE

1 tsp
chili powder
1/2 tsp
paprika
1 1/2 tsp
salt
1/2 tsp
black pepper, coarse ground
1/2 tsp
cumin (ground)
1 tsp
cinnamon (ground) or 1/2 tsp depending on preference

GLAZE

1 c
light brown sugar, packed
2 Tbsp
flour
2 Tbsp
apple cider vinegar
1/2 tsp
dry mustard

How to Make Bacon Wrapped Pork Loin with Brown Sugar Glaze

Step-by-Step

  • 1Preheat oven to 350F.
  • 2Place pork loin in a roasting pan. Combine the RUB ingredients and rub over the pork. NOTE* My husband prefers less cinnamon.
  • 3Cut each strip of bacon in half crosswise and lay them over the pork loin. Roast (uncovered) for about 1 1/2 to 2 hours, or until pork reaches 150 degrees.
  • 4Meanwhile, combine the brown sugar, flour, cider vinegar and dry mustard in a saucepan. Bring to a simmer and simmer for about a minute and one-half. Pour over the pork and return to oven. Roast for about 15 to 20 minutes longer, or until pork registers 160 degrees. NOTE: I bought one with a pop-up timer.
