I got this recipe from a co-worker and made it for the first time today. It is like eating candy!

Ingredients

  • 1 bunch
    broccoli, fresh cut into bite size pieces
  • 1/4 c
    golden raisins
  • 1/4 c
    craisins
  • 1/2
    red onion, chopped
  • 1 pkg
    refrigerator tortellini
  • 2 Tbsp
    granulated sugar
  • 2 Tbsp
    apple cider vinegar
  • 1 c
    mayonnaise
  • 1 lb
    bacon (or use bacon bits)
  • 1/2 c
    sunflower seeds

How to Make Tortellini Salad

Step-by-Step

  1. Cook bacon until crisp. Drain, crumble and set aside.
  2. Cook tortellini as directed on package.
  3. Blanch broccoli in boiling water just until the color starts to turn and immediately remove from heat and run under cold water.
  4. In a salad bowl, toss together broccoli, tortellini, raisins, craisins and red onions.
  5. In a small bowl, whisk together the sugar, vinegar and mayonnaise. Pour over broccoli mixture and toss to coat. Refrigerate for at least 2 hours.
  6. Before serving, sprinkle with sunflower seeds and crumbled bacon. Toss and serve.
