This is like a pasta version of a Caprese sandwich! Simple and so good.

Ingredients

  • 1/2 lb
    fettuccine pasta
  • 2
    medium sized ripe tomatoes
  • 3
    cloves garlic, chopped
  • 6-8
    basil leaves, cut into thin ribbons
  • 2 Tbsp
    olive oil
  • ·
    kosher salt and fresh ground pepper to taste
  • ·
    parmesan cheese, grated

How to Make Tomato Basil Pasta

Step-by-Step

  1. Roughly chop the tomatoes and remove the seeds.
  2. Put the tomatoes in a bowl with the garlic, basil and olive oil.
  3. Season with salt and pepper.
  4. Drain pasta, add to bowl and toss well with tomato mixture.
  5. Top with tomato, parmesan cheese and another few grinds of pepper.
