Ingredients

  • 1 lb
    spaghetti
  • 1/4 c
    butter at room temp
  • 1 1/4 c
    pecorino romano cheese freshly grated
  • 1 c
    fresh arugula
  • ·
    salt
  • ·
    freshly ground black pepper for serving

How to Make Spaghetti with Pecorino Romano & Arugula

Step-by-Step

  1. Bring a large pot of water to a rolling boil. At the salt enough to make it taste like the sea. Bring back to a rolling boil. Add the spaghetti and cook until al dente.
  2. Drain reserving one cup of pasta water. Place the spaghetti in a bowl. Add the butter and cheese and stir until both are melted. Stir in the arugula.
  3. Serve with freshly ground black pepper
