We love pierogis and this casserole is a modern rendition of a traditional dish. It really tastes like a pierogi. The layers of pasta and potatoes are cheesy and delicious. As an added bonus, buttered onions are mixed into the potatoes and baked on top. Oh my... This is a savory dish that's warm and comforting. Your family will love it.

Ingredients For pierogi casserole

  • 1 lb
    lasagna noodles, cooked
  • 10-12
    medium potatoes, peeled
  • 2 md
    onions, diced
  • 1 1/4 c
    butter or margarine
  • 2 bag
    cheddar cheese, shredded (8 oz each)
  • salt and pepper, to taste

After the casserole comes out of the oven, sprinkle with a bit of cracked pepper and fresh parsley for added flavor and color.
  • Lasagna noodles cooking in a pot.

    Cook the noodles according to the package directions.
  • Potatoes cut into equal size chunks.

    Cut the potatoes into equal chunks.
  • Potatoes in boiling water.

    Add the potatoes to boiling water and cook until tender.
  • Onions sauteing in butter.

    While your potatoes are boiling, saute the onions in the butter until soft.
  • Mashing hot, cooked potatoes.

    Drain the potatoes. Mash while hot.
  • Adding cheese to potatoes.

    Add the cheese to the mashed potatoes and beat with a mixer.
  • Adding part of the onion/butter mixture to potatoes with salt and pepper.

    Add 1/3 of the onions to the potato mixture and salt and pepper to taste.
  • A layer of noodles covering the pan.

    Preheat the oven to 350 degrees F. Generously butter a 9x13 baking pan/dish. Place a layer of cooked noodles to cover the bottom of the pan.
  • Potato mixture on top of lasagna noodles.

    Spread a layer of potato mixture onto the noodles.
  • Adding additional noodle layer on top of potato layer.

    Repeat, ending with noodles.
  • The rest of the onion/butter mixture on the top layer of casserole.

    Spoon the rest of the onion over top.
  • Casserole as it comes out of the oven.

    Cover with foil and place the pan on a cookie sheet just in case the butter runs over the sides. Bake until heated through, approximately 30-40 minutes.

    Optional: I remove the foil after 30-40 minutes, sprinkle more cheese on top, and place back in the oven until the cheese is melted.
