This was a Betty Crocker recipe that I've adapted for two and to our taste. The recipe called for orzo, but other pasta, couscous, barley, or even rice, could be used. I use my rice cooker for nearly anything! Prep time is for chopping the herbs. Cook time is only for the pasta or rice. If you cook your own chicken, that needs to be included, but I often use canned (like tuna) to save time. The recipe calls for basil, oregano, marjoram, thyme, or a combination. I suggest that you experiment with your own herbs or combinations. Let me know what works best for you.

Ingredients For pasta with chicken and herbs for two

  • 1/4 c
    uncooked pasta
  • 1/2 pt
    cherry or grape tomatoes, halved
  • 1 Tbsp
    olive oil
  • 1 Tbsp
    white wine vinegar
  • 1/4 tsp
    salt
  • 1 pinch
    pepper
  • 3 Tbsp
    chopped fresh herbs
  • 1 c
    diced cooked chicken
  • 1/2 c
    small balls of mozzarella
  • 2 lg
    butter lettuce leaves
  • 2 clove
    garlic, diced

How To Make pasta with chicken and herbs for two

    Cook, drain, and rinse pasta.

    Mix Tomatoes, garlic, oil, vinegar, salt, pepper and herbs.

    Add chicken, cheese, and pasta.

    Toss to mix. Place on lettuce leaf. Serve and enjoy.
