Pasta con Ricotta (Macaroni with Ricotta)
Ingredients

1 lbmedium shells or ditali

1 lbricotta cheese (any kind works with this recipe)

1/2 cmilk or you can use some of the pasta water

2-4 Tbspbutter (optional)

·parmesan cheese
How to Make Pasta con Ricotta (Macaroni with Ricotta)
- Cook pasta according to package in salted water.
- Drain pasta (if your using pasta water make sure to reserve about 1 cup). Return pasta to the pot and add the butter if using.
- Mix the ricotta into the pasta and add either the milk or pasta water. (If using pasta water start with just using a 1/2 cup. You want it moist but not soupy)
- OR
You can mix the ricotta and milk together in a bowl until smooth and pour over the hot pasta. I like to keep it simple and not dirty an extra dish :) - Some people like to add the parmesan cheese to the pasta at this point and serve but I always serve and let everyone add their own parmesan cheese which is on the table.
