orzo - with kielbasa

This is just another of our simple, use what you have on hand recipes. Sometimes we put the beans in it and other times we leave them out. I hope you will enjoy this easy but tasty recipe and feel free to jazz it up with things you like .. more vegies, some tomato sauce, extra cheese. Change up the Kielbasa to a smoked sausage .. or make it meatless ! Whatever makes your tummy happy !

Ingredients For orzo - with kielbasa

  • 1 Tbsp
    butter
  • 4 oz
    uncooked orzo pasta
  • 1 tsp
    butter
  • 3 Tbsp
    chopped onion
  • 3 Tbsp
    chopped green bell pepper
  • 1/4 c
    chopped cabbage
  • 4 - 6 oz
    beef kielbasa - about 1/4 of a ring of kielbasa
  • 1/2 tsp
    garlic powder - more to taste
  • 1/4 tsp
    pepper - more to taste
  • 2 c
    chicken stock or broth
  • 1/4 c
    parmesan cheese - grated or fresh
  • 1
    green onion thinly sliced or 2 tbsp snipped chives
  • optional: add 1 cup great northern beans - drained and rinsed

How To Make orzo - with kielbasa

    In a medium sauce pan melt 1 Tbsp of butter over medium heat. Add Orzo pasta and toast until nice and golden brown. Remove to browned Orzo to a medium sized bowl and keep warm.

    Add 1 tsp butter to same pan and when melted add the onion, bell pepper and chopped cabbage and saute for about 4 minutes then remove from pan and add to the Orzo in the bowl.

    Meanwhile cut the Kielbasa into cubes then add it to the same pan and cook over medium heat until browned.

    Return the Orzo and cooked vegies to the pot. Add the garlic powder and the pepper and stir to mix. Add chicken stock, stir and bring to a boil Reduce heat to medium low and let liquid cook almost out of it or until pasta is done - about 15 minutes. Keep an eye on the liquid so the pot doesn't cook dry. If necessary, add an additional 1/4 cup to 1/2 cup liquid.

    When the cooking time is done - if you are using the optional Great Northern Beans, add them now along with the Parmesan cheese. Stir to mix then cover and turn heat off and let set for 10 minutes covered before serving. Serve hot garnished with chopped green onions or chives if you prefer.
