We love this tasty and easy way to make a noodle side dish that goes well with any meat, fish or poultry. You won't be able to tell that it contains blue cheese because the sauce takes on a flavor of its own. This historical recipe is at least 150 years old. It was created by Arthur Dupont, a cook from Carnieres, Belgium, and the original name of this authentic recipe is Spaghetti Dupont. Enjoy! The photo is my own.

    8 ounce package of egg noodles
  • 1
    ounce of good blue cheese crumbled
  • 1
    heaping tablespoon of real butter
  • 1/4
    level teaspoon black pepper
  • salt to taste

How To Make bonnie's noodles dupont

    PREPARE THE NOODLES You may use spaghetti or egg noodles. I used egg noodles for this dish. Put the water on to boil, add the pasta, and then cook the pasta until it is like you like it. Drain off the hot water, and fill the pot with the cold water and add the noodles back to the pot, stir gently as this will remove the starch from the noodles, drain again.

    MELT THE BUTTER Add the butter to the pot you cooked the noodles in. When it melts, add the blue cheese crumbles and the pepper.

    MIX IT UP Stir the noodles over and over, gently to coat all the noodles with the sauce. make sure the heat is on low while you heat the noodles nice and hot.

    SERVE THE NOODLES Serve the noodles with any meat, fish or poultry. Enjoy!
