Making the little meatballs for this recipe takes forever and I usually just make big meatballs, or just throw the meat in as is, but my Memere said it made all the difference and most people prefer the little meatballs. When I have time I do it right. And if you have young kids at home they love to help make meatballs! It's a three part recipe that I'm pretty sure got published somewhere way back before the internet. 1. Sauce, 2. meatballs, and 3. lasagna. This is a big part of why I joined this site - to share this recipe with people who do home cooking with love! It's one of those recipes that you put a lot of love into. Ingredients For memere's lasagna

  • SAUCE
  • 1/4 c
    olive oil
  • 1/2
    onion, diced
  • 2 can
    plum tomatoes
  • salt
  • 6 oz
    tomato paste
  • 1 c
    green pepper
  • 3 clove
    garlic, minced
  • 2 Tbsp
    parsley
  • 1/2 c
    water
  • pepper
  • MEATBALLS
  • 1 lb
    ground beef
  • 1 lb
    ground pork
  • 1/4 c
    bread crumbs
  • 2 Tbsp
    milk
  • 2
    eggs, slightly beaten
  • 3 Tbsp
    grated parmesan cheese
  • 2 Tbsp
    anise seed (i crush mine in a mortar)
  • 1 tsp
    salt
  • pepper
  • BAKED LASAGNA
  • 1 pkg
    lasagna noodles
  • 3 Tbsp
    olive oil
  • 1 lg
    container ricotta cheese
  • 12 oz
    fresh mozzarella cheese
  • 1 c
    grated parmesan cheese
  • 1 1/2 c
    sauteed mushrooms
  • 1
    egg

How To Make memere's lasagna

    Sauce Directions: 1. Saute the garlic, onion and green pepper in the olive oil until the onion is transparent. 2. Add remaining ingredients and simmer for 3 to 4 hours. Add more water if it gets too thick. Stir occasionally. Cover with splatter guard.

    Meat Balls for Lasagna Directions: 1. Mix all the ingredients together in a bowl. 2. Shape into tiny balls the size of marbles. 3. In a large skillet, brown the balls in olive oil. Pour off excess grease and add to Lasagna Sauce during the last ½ hour of simmering. NOTE: These meatballs could be made larger and added to other pasta recipes

    Baked Lasagna Directions: 1. Prepare one recipe of Lasagna Sauce in which one recipe of Lasagna Meat Balls have been simmering. While they are simmering, cook Lasagna pasta per box directions, adding oil to boiling water to prevent sticking. Be careful not to overcook or they will break apart. Drain cooked pasta and place on paper towels to absorb excess moisture. 2. In separate bowl mix ricotta cheese and egg until well blended. 3. Slice mozzarella cheese in strips. 4. Oil a 16”x12”x2” casserole and cover bottom with sauce only. Add prepared foods in following layers: 1/3 of Lasagna pasta in strips covering dish, cover with 1/3 ricotta cheese mixture, cover with 1/3 of meat and sauce mixture, salt and pepper, cover with ½ of mozzarella strips, sprinkle with 1/3 of Parmesan. Repeat. Top ends with pasta, mozzarella, meat sauce, Parmesan and the mushrooms. 5.Bake at 350 for 20-25 min. Cool for 10 min. before cutting.
