Ingredients For meat lasagna

    lasagna noodles
  • 500 g
    (17 ounces) ricotta cheese
  • 1 lg
    free-run egg
  • 2 Tbsp
    fresh chopped parsley, divided
  • 14 c
    pasta sauce
  • 100 g
    (3.5 ounces) pastrami, cut into 1/4-inch strips x 1-inch long, divided
  • 100 g
    (3.5 ounces) extra hot capocollo aka capicola, cut in 1/4-inch strips x 1-inch long, divided
  • 250 g
    (9 ounces) chorizo sausage, slices and cut into quarters, divided
  • 450 g
    (16 ounces) mozzarella cheese, grated and divided
  • 1 1/2 c
    grana padano cheese, grated and divided

How To Make meat lasagna

    In a large bowl filled up with hot water from the tap (not boiling), place 6 lasagna noodles and soak for 20 minutes to soften.

    In a medium mixing bowl, add ricotta cheese, egg and 1 tbsp. chopped parsley; stir to combine and set aside.

    In a 15 ½ X 10 ½ baking dish lightly spray with cooking spray, spoon in enough pasta sauce to cover the bottom of the pan. Place the softened noodles side by side on the sauce. Repeat another batch of 6 noodles soaking in fresh hot water for 20 minutes.

    Spread pasta sauce over the noodles before adding ½ pastrami, ½ capocollo and ½ chorizo. Add ½ the ricotta mixture, spreading evenly. Sprinkle on 1/3 Mozzarella and 1/3 Grana Padano. Place another layer of soaked noodles (soak the last 6 noodles in fresh hot water from the tap for 20 minutes) and repeat the same steps; spread pasta sauce, add the remaining cold meats, then the rest of the ricotta cheese mixture and sprinkle on another 1/3 of mozzarella and Grana Padano cheese. Preheat oven to 375ºF

    Finish with a layer of soaked noodles, pressing gently to compact the ingredients, giving more head space for the final toppings. Spread the pasta sauce evenly to cover the entire surface and sprinkle on the remaining cheeses. Sprinkle with remaining 1 tbsp. parsley.

    Spray foil with cooking spray and cover the baking dish loosely. Transfer to the preheated oven and bake for 25 minutes. Carefully remove foil and bake an additional 25 minutes. Cool for 15 minutes before serving. Serves 12
