Another family recipe. My Aunt Ginger made all her pastas, tomato sauce from scratch. This is her homdemade gnocchi.

Ingredients For homemade gnocchi

  • 2 large potatoes
  • 1 c
    flour
  • 1
    egg
  • 1
    8 ounce container ricotta cheese
  • 2 tsp
    salt
  • 1/4 c
    parsley flakes
  • I START OUT WITH I CUP FLOUR SOMETIMES I MIGHT NEED APPX. 1 MORE TABLESPOON.

How To Make homemade gnocchi

    Boil 2 large potatoes( slice) in boiling water add a teaspoon salt to water. Appx. 10 minutes. Check with fork to make sure the potatoes are cooked through.

    Mash cooked potatoes until creamy add one egg and small container of ricotta cheese and 1/4 cup parsley. (A dash of salt and pepper optional)

    Add the 1cup of flour a little at a time until dough is of rolling consistency. Sometime i have to add a additional tablespoon. Check your consistency.

    You should have a nice round mound of dough. Flour a surface. I use my big wooden kitchen table. Take a handful of dough and roll out into a snake shape. About 1/2 inch thick. Cut into 1 inch pieces and roll each piece with thumb to form a boat.

    Placed gnocchi on a floured cookie sheet. Flour and add sheets of wax paper to prevent them from sticking. Place cookie sheet in freezer for a short time so the gnocchi won't stick together until ready to cook.

    They don't take long to cook about 5 minutes. Just add gnocchi to boiling salted water and when they rise to the top they are done. drain and add your favorite sauce and sprinkle with parmemsan cheese.

    You can put homemade gnocchi in a freezer bag and freeze to use at a later date and they will be fine.

    I have a wonderful recipe for homemade tomato sauce as well "gravy" but i never measure the ingredients. I will take all measurements the next time i make and post the homemade tomato sauce as well.
