This is just another way I make this pasta dish. But I do love saying "RAT"atouille LOL

Ingredients For grilled "rat"atouille pasta

  • 1/2 lb
    curly pasta
  • 1/4 c
    oil, divided & extra for the grilling
  • 1 md
    zucchini, sliced lengthwise
  • 1 md
    bell peppper, stemmed & seeded
  • 1 sm
    red onion, halved
  • 1 sm
    eggplant, sliced lengthwise
  • 4 lg
    tomatoes, cut crosswise into thick slices
  • 3 - 4 Tbsp
    balsamic vinegar, white
  • 1/4 c
    fresh parsley, rough chopped
  • dash
    salt and pepper

How To Make grilled "rat"atouille pasta

  • 1
    frist in a medium pot of boiling salted water cook the pasta as box insttuctions say. Reserve 1 cup of pasta water. Drain pasta well & set aside.

    Next heat your grill or grill pan to medium-high heat. Lightly oil grill. Work in small batches grill all the vegetables with oil & season. Make sure to turn vegetables occasionally. Place on cutting board & let cool.

    Then rought chop all the vegetables & than ad to the pasta along with 2 Tbsp oil & vinegar. Make sure to taste to make sure seasoning is right. Add in the saved pasta water.

    The pasta water will make a light sauce. Season once again with the salt & pepper. Than sprinkle with the parsley & serve.
