This homemade Alfredo sauce is rich, creamy, and very thick. We love the minced garlic flavor in the sauce. Adding broccoli, tomatoes, and green onions gives the heavy pasta dish a bit of freshness. You could even add chicken or shrimp to this dish too. An easy weeknight pasta dinner.

Ingredients For fettuccine alfredo with vegetables

  • 1 pkg
    fettuccine noodles (12 oz)
  • homemade creamy Alfredo sauce (see below)
  • 2 bunch
    fresh broccoli
  • 1
    firm tomato
  • 2
    green onions
  • black pepper
  • fresh Parmesan cheese as a garnish
  • HOMEMADE CREAMY ALFREDO SAUCE
  • 1 stick
    butter or margarine equivalent
  • 8 oz
    cream cheese
  • 2 c
    mozzarella and Parmesan blend
  • 1 - 1 1/4 c
    milk
  • 1/2 c
    sour cream
  • 3 clove
    fresh garlic, minced
  • black pepper
  • 1/2
    lemon

How To Make fettuccine alfredo with vegetables

We boiled the broccoli for 5 minutes.
  • Draining cooked fettuccine.

    Cook noodles according to package directions, or if you're inclined to do so, make your own. When noodles are done drain well.
  • Cooking broccoli.

    Prepare fresh broccoli to be cooked. I always leave mine somewhat firm.
  • Preparing the additional veggies.

    Prepare your other veggies... dice tomato neatly and chop up green onion. If using fresh garlic, chop that up too.
  • Melting butter in a pot.

    For the sauce, melt butter/margarine first. I use Best Life buttery spread as it has no trans fat or hydrogenated oils.
  • Cream cheese and butter added to the butter.

    Then add in cream cheese and garlic.
  • Whisking ingredients together.

    Keep the heat on low to medium and stir constantly unless it will burn.
  • Sour cream and milk whisked in.

    Add in sour cream and milk and wait until everything is well melted together.
  • Cheese added to the Alfredo sauce.

    Then add the cheese.
  • Pepper and lemon added to the sauce.

    Once the cheese is thoroughly melted, add pepper to taste and a splash of lemon. Serve immediately.
  • Ingredients assembled on a plate.

    Pile noodles on a plate or in a bowl. Toss on broccoli and then cover with sauce. Sprinkle diced tomato and green onion on top. Squeeze a bit of lemon juice on and garnish with cheese. Yum!
