I have been reading about avocado pasta sauce for a while now, so decided to try it. The recipes I read sounded good but lacking in flavor for my taste. I was so pleasantly surprised at the ease of preparation and how delicious it was. My whole family loved it. I made one plate vegan for my neighbor with just sauteed crimini mushrooms. I added smoked turkey to ours and topped it with parmesan. Vegan style can definitely stand on its own. I have also made this into a pasta salad by adding other veggies and fusilli pasta and serve cold. The bonus is, it is very healthy for you with no mayo.

Ingredients For dee-licious avocado pasta

  • 1 - 12 oz box
    whole grain, gluten free, or quinoa pasta, or pasta of choice
  • 2 - 3
    ripe avocados, depending on size
  • 1 lg
    lemon, juice and zest(save 1/2 of zest for garnish)
  • 3-4 clove
    garlic
  • 3
    green onions
  • 1 c
    fresh basil leaves
  • a handful
    of fresh parsley, optional
  • 3 Tbsp
    olive oil, extra virgin
  • sea salt & fresh ground pepper to taste
  • reserved pasta water to loosen sauce if needed
  • OPTIONAL ADD INS
  • 2 c
    cubed chicken, turkey, etc. i used smoked turkey
  • 8 oz
    sliced and sauteed cremini mushrooms.
  • parmesan cheese for the top

How To Make dee-licious avocado pasta

    Boil pasta according to package directions. Reserve some pasta water when draining it to add to the sauce later if needed.

    While pasta is boiling, peel and pit avocado. Cut up green onions coarsely, and put them, the juice of the whole lemon and zest from 1/2 a lemon (save rest for garnish) and remaining ingredients in the bowl of a food processor. Puree until smooth, about 1 minute. Add pasta water to thin sauce a little if you think it is necessary. Pour over the hot drained pasta and toss. Top pasta with remaining lemon zest and parmesan if desired. Serve immediately.

    If you want more protein, you can add cubed chicken, turkey, etc. I used smoked turkey and it was yummy...so yes, it would be a good use for leftover turkey. Enjoy!

    In my opinion, this could be used as a dip for veggies or dressing for a yummy cold pasta salad. I left out the basil and add more veggies to the pasta and used this to bind it together. It is so much more healthy than ones loaded with mayo.
