Ingredients For crock pot tortellini with chicken mini meat balls

  • 2 Tbsp
    olive oil
  • FOR THE CHICKEN MINI-MEAT BALLS
  • 1 lb
    ground chicken or turkey
  • 1 tsp
    salt
  • 1 c
    italian style bread crumbs
  • 1/4 c
    grated parmesan cheese
  • 1
    egg
  • 1 tsp
    onion powder
  • 1 tsp
    garlic powder or a couple of cloves of minced garlic
  • 1/4 tsp
    ground pepper
  • FOR THE TORTELLINI
  • 1 pkg
    frozen cheese tortellini
  • 1 can
    cream of mushroom soup
  • 1 pt
    half & half
  • 2 Tbsp
    butter
  • 1/2 c
    fresh grated parmesan cheese
  • 1 can
    mushrooms, stems and pieces
  • 1/2 tsp
    salt
  • 1/4 tsp
    ground pepper
  • 1/4 tsp
    ground nutmeg
  • OPTIONAL GARNISHES
  • fresh chopped parsley or basil (optional)
  • grated parmesan cheese (optional)

How To Make crock pot tortellini with chicken mini meat balls

    In a large bowl, combine all meat ball ingredients and mix thoroughly. Shape into very small meat balls.

    Bake meat balls in oven at 350 for 15 minutes. When meat balls are done, place them in a sealed container and refrigerate until ready to use.

    Put tortellini in slow cooker and pour in soup, half & half, salt, pepper, nutmeg and 1/2 cup parmesan cheese. Stir to combine.

    Cook, covered, on low until tortellini are tender, about 3 hours. In last hour of cooking add, meatballs and mushrooms.

    Tip: Add more milk or half & half to thin out if needed while cooking.

    Plate, sprinkle with more grated parmesan cheese and fresh chopped parsley or basil if desired, and serve!
