Ingredients

  • 16 ounces penne pasta
  • 2 tablespoons butter
  • 2 cups grape tomatoes
  • 2 cups baby spinach
  • 2 cloves garlic, minced
  • 1/2 cup heavy cream, room temperature
  • 2 packages Boursin cheese, garlic and fine herbs (5.3 oz each)
  • torn fresh basil
  • chopped freshly parsley
  • salt to taste
  • freshly ground black pepper to taste
  • freshly grated Parmesan cheese (optional)

How To Make boursin cheese pasta

  • Step 1
    Bring a large pot of salted water to a boil. Cook the pasta al dente according to package instructions and drain well. Reserve 1/2 cup of pasta water for thinning the sauce.
  • Step 2
    Melt the butter in a large skillet over medium-low heat. Cook the grape tomatoes and spinach until the spinach wilts.
  • Step 3
    Reduce the heat to low and add the garlic. Stir and cook for 1 minute. Stir in the cream and Boursin cheese. Cook over very low heat until melted.
  • Step 4
    Add the drained pasta, sprinkle with fresh herbs, and season to taste with salt and freshly ground black pepper. If desired, sprinkle with a bit of Parmesan cheese.
