Ingredients
- 16 ounces penne pasta
- 2 tablespoons butter
- 2 cups grape tomatoes
- 2 cups baby spinach
- 2 cloves garlic, minced
- 1/2 cup heavy cream, room temperature
- 2 packages Boursin cheese, garlic and fine herbs (5.3 oz each)
- torn fresh basil
- chopped freshly parsley
- salt to taste
- freshly ground black pepper to taste
- freshly grated Parmesan cheese (optional)
How To Make boursin cheese pasta

Step 1Bring a large pot of salted water to a boil. Cook the pasta al dente according to package instructions and drain well. Reserve 1/2 cup of pasta water for thinning the sauce.

Step 2Melt the butter in a large skillet over medium-low heat. Cook the grape tomatoes and spinach until the spinach wilts.

Step 3Reduce the heat to low and add the garlic. Stir and cook for 1 minute. Stir in the cream and Boursin cheese. Cook over very low heat until melted.

Step 4Add the drained pasta, sprinkle with fresh herbs, and season to taste with salt and freshly ground black pepper. If desired, sprinkle with a bit of Parmesan cheese.
