Ingredients For zucchini, ground veal & ricotta crown

  • 3-4
    zucchini, thinly sliced (use madolin)
  • 6 Tbsp
    olive oil
  • 2 c
    ground beef or lamb
  • red chili flakes to taste
  • 3
    garlic cloves, diced or minced
  • 1
    onion, grated
  • 1/2 c
    white wine
  • small bunch of parsley, finely chopped
  • 2+1 egg beaten
  • 1 1/2 c
    ricotta cheese, crumbled
  • 1/3 c
    kefalotyri or parmesan cheese, shredded
  • 1/2 c
    milk
  • salt & ground pepper
  • dash of mrs. dash

How To Make zucchini, ground veal & ricotta crown

    Preheat oven at 400 degrees F. In a large skillet add 3 Tbsp olive oil & saute the zucchini on high heat. Once cooked placed on a paper-lined plate. in a medium saucepan add 3 Tbsp olive oil on high heat & sautee the beef (or lamb if using) Add the garlic, onion and sprinkle with red chili flakes to your taste. Cook, stir and once ground meat isn't red anymore you, add the white wine, salt & pepper and lower the heat. Cover the pan & let cook for 15 more minutes.

    Meanwhile, lightly grease a springform pan, sides & bottom, and place the cooked zucchini slices on the sides & then the bottom of the pan. Try to overlap the zucchini slices just a bit so they stick to each other.

    Once the meat is cooked, add the beaten egg & parsley and mix lightly & spread in the pan. In a medium-size bowl beat the 2 eggs, add the crumbled ricotta, kefalotyri or parmesan, milk & pepper & dash of Mrs. Dash. Whisk till you have a smooth cream. Spread the cheese mixture on top of the meat & bake for about 30 minutes or until golden brown.

    Tip: This recipe was for a loaf pan. I wanted to use my springform pan which is 9 inches. So I doubled the recipe.
