This is a lovely versatile stew. Rich,comforting and delicious. All the lovely flavors create something truly special. I hope you will enjoy this wonderful dish.

You can add a nice spicy sausage or chicken pieces at the end for a heartier dish if you like.

    dried red lentils
  • 1- 2
    clove(s) garlic, finely chopped
  • 1/2
    onion, chopped
  • 1 - 1 1/2 Tbsp
    butter or olive oil
  • 4 c
  • 2
    vegetable or chicken bouillon cubes
  • 2 large
    tomatoes, diced
  • 1 large
    carrot, peeled and diced
  • 1 small
    apple - peeled, cored and diced
  • 1/4 c
    bbq sauce, garlic or onion
  • 1/2 tsp
    paprika, ground
  • 1
    bay leaf
  • 1 tsp
    dried oregano
  • 1/2 tsp
    cumin (optional)
  • 1 tsp
    sea salt, fine
  • 1/2 tsp
    black pepper

How to Make Yummm Lentil Stew


  1. In large pot, sauté onion and garlic till golden brown then add in the 4 cups of water and the vegetable or chicken bouillon and bring to a boil.
  2. Add lentils, to the pot and reduce the heat to low, simmer for 20 - 30 minutes.
  3. Next, add all the remaining ingredients, mix well and continue to simmer for about 20 minutes.

    If necessary, add more water till your desired consistency is achieved.
  4. When ready to serve, season with salt and pepper. This is a meal in its self, served with rice or a nice loaf of crusty bread.
