Everyone knows we all need to add more fish to our diets, so here's a quick two-person recipe.

The tilapia is a very mild-flavored fish so takes well to spices and sauces. This particular brand, Ocean Chef, has a very low sodium (40mg) content compared to other brands.

My fiance has a sodium-restricted diet and tilapia is one of the few fishes she will eat.

Ingredients

  • 1 tsp
    dried oregano leaves
  • 3/4 tsp
    salt-free spicely mexican spice mixture
  • 1/4 tsp
    garlic powder
  • 1/4 tsp
    onion powder
  • ·
    ground black pepper to taste
  • 1/2 lb
    tilapia filets, thawed
  • 2 Tbsp
    olive oil
  • 1
    egg, beaten
  • ·
    flour, for dredging

How to Make Tex Mex Tilapia

Step-by-Step

  1. Combine the first four (4) spices and spread on a plate. Lightly beat egg in a bowl. sprinkle some flour on a plate. Arrange in order: flour, egg and spice.
  2. Dry the filets, then dredge in flour until uniformly covered. Dip the filets in bowl of beaten egg, then press them onto the spice mixture. Place them on a cooling rack to allow the egg to harden up a bit
  3. put two (2) tablespoons of olive oil in a medium skillet on medium heat. Cook three to five minutes on each side until fish flakes easily with a fork.

    Serve with steamed Haricot Verts or cottage fries.
