other meats and meat mixes (ie beef and pork meat loaf mix) can be substituted for the kielbasa sausage. This recipe tastes good up and down the Scoville heat scale; choose your setting wisely.

Ingredients For stuffed poblano pepper

  • 2 lg
    poblano peppers (skinned,halved,cleaned)
  • 1/4 c
    la preferida refried beans
  • 1/4 c
    mateo's salsa
  • 1/4 c
    cooked rice
  • 1/4 c
    onion diced
  • 1/2 c
    peppers diced (mix hot and sweet to taste)
  • 1/2 stick
    kielbasa sausage
  • few dash
    sriracha hot chili sauce, chili pepper mix to taste
  • 1/2 c
    shredded mexican 4 cheese

How To Make stuffed poblano pepper

  • 1
    char poblano peppers over open flame, scrape off outer skin, slice in half and remove seeds (save seeds)

    in a bowl mix rest of ingredients except cheese, mix thoroughly and fill sliced poblano peppers.

    bake in a preheated 350' oven for 30 minutes. Sprinkle with cheese and bake an additional 5 minutes.
