  • 1 1/2 lb
    lamb, boneless cut into 2 inch cubes
  • 1 1/2 Tbsp
    olive oil
  • 1/2 medium
    sweet onion, chopped
  • 1/2
    head of garlic, unpeeled, seperated,
  • 1
  • 1/2 Tbsp
    paprika, sweet mild
  • 1/4 tsp
  • 1/4 c
    red wine vinegar, good quality
  • 1 tsp
    sea salt
  • 1/2 tsp
    black pepper, freshly ground
  • ·
    lamb stock/broth (as needed)

How to Make Stewed Lamb


  1. Heat the oil in a large pan.

    Add the meat pieces and cook till they are nicely browned.
  2. Then add the onions, and fry until they are golden.
  3. Add the garlic, bay leaf, paprika, cinnamon, vinegar, salt and pepper.
  4. Turn heat to low, cover the pan and let simmer for 2 hours, until tender .
  5. Check periodically to make sure it is not drying out...add stock/broth as necessary.
