Rice dishes can be used as a simple or complex side dish to most any meal. It can also be used as a neutral, complimentary, or contrasting substrate or ingredient for millions of regional meals. A few notes about Rice. Rice grows in flooded paddies to mountain slopes; there are more than 40,000 species! Brown rice has 80 percent more inorganic arsenic on average than white rice of the same type. Arsenic accumulates in the husks, which are removed to make white rice. Brown basmati rice from California, India, or Pakistan has about a third less inorganic arsenic than other brown rice.

    To select which rice to use consider the following. Milling off the husk to a white rice reduces the arsenic content but at the expense of of other nutrients, bulk, and fiber. Many rices have it's own inherent taste, sizes, shapes,colors and textures. This recipe is using a white Basmaite rice from California.

    Rice can be cooked in a rice cooker, steamed or boiled. Boiling and rinsing helps remove arsenic. Our area has Arsenic in the water so I use RO water. I boil the rice with double the called for water on the package. When fully cooked I thoroughly rinse the rice again with RO water. In this recipe I am adding a cleaned and diced Jalapeno pepper to add some regional spicy flavor through out the rice. Many other ingredients can be added depending on the region and affect you are looking for. If I am making a large quantity for portioning out and freezing for future use in a quick recipe then I will not add the spices.
