This is so easy to make in a rice cooker! I found this in my Cooking for 2 mag. It is nice to set it and go about your business. I change it all the time, it had cabbage in it, and I leave that out usually and put in different veggies.

Ingredients For rice cooker meaty rice & veggies

  • 1 can
    diced tomatoes, w/basil garlic and oregano
  • 1/2 c
    uncoooked instant brown rice
  • 1/2 c
    frozen onions and peppers
  • 1
    stalk chopped celery
  • 1/4 c
    water or broth
  • 1
    chicken breast halves, chopped and uncooked
  • 1-2
    smoked turkey sausage, sliced
  • garlic powder
  • cheese of your of your choice~ for topping

How To Make rice cooker meaty rice & veggies

  • 1
    Combine all the ingredients in a 4 cup rice cooker. Turn the lever to the "cook" function.

    Cover and cook till light turns off, about 45 min. Stir and let sit on the "warm" function for about 10 min. Let stand 5 mins before serving.

    Top with cheese for serving if desired.
