I had seen this type of dish floating around fb but only grilled in foil pouches. Since I love to grill in my cast iron skillets, and I knew I'd save on foil I decide to do just that. This came out so good, everything just melts in your mouth and is so full of flavor. I can't wait to think up another dish to use this grilling method on. Prep time includes marinating the meat.

Ingredients For one pan grilled meal

  • 2 lb
    chuck steak or any tender steak
  • 4-6
    carrots
  • 6 sm
    golden potatoes (or red potatoes)
  • 1 sm
    sweet onion
  • 2-4
    corn on the cob
  • marinade or seasoning of choice
  • 1 c
    water
  • olive oil

    Cut steak into medium size chunks and marinade or season and let sit for an hour or so in fridge (up to overnight).

    Cut potatoes in half or fourths depending on size, cut carrots in thick rounds and dice onion medium size.
  • This was not just good, it was scrumptious!!  My new way to cook one-pan meal on the grill this summer.  The sky is the limit on ideas!!

    Once steak has marinaded toss with potatoes, carrots and onion well to season. Place in large cast iron skillet, or oven proof skillet that has been drizzled generously with olive oil. Spread out and take to grill. Place over low heat and over with foil or lid.

    Grill for about 1-2 hrs covered, stirring every 20-30 min. Time will depend on heat and size of pan. After about 1 hr. add about 1/2 - 1 c of water. This will keep everything from drying out as it cooks.

    Once potatoes and carrots are fork tender add corn and turn off heat. Cover and let sit about 5-10 mins.
