My hubby was in the Air Force. He was waiting to be sent to Viet Nam. I was in Okinawa, Japan.At the Kadeena AFB in the 70s. My apt was up over a Japanese Market. The Momason came up to my apt. She said she would teach me to make her food, if I would teach her to make Hot Dogs and Hamburgers. This was where I learned to make Easy Fried Rice. Over the years I have modified the recipe, but its' still our favorite. Just fried rice for diner or a 5 course meal!The Mom ason was disappointed when she learned that Hot Dogs was not made from Dog-meat. And no ham on a hamburger?

Ingredients For kay's easy fried rice

  • 2 c
    dry minute rice
  • 1 md
    chopped onion
  • 2
    eggs
  • oil
  • 5-6 dash
    soy sauce as frying
  • 1-2 can
    chicken, drained
  • 1 can
    drained mixed veggies
  • 1-2 dash
    garlic powder with parsley

    Utensils you will need} 1 skillet w/ lid 1 wooden spoon chopper

    Directions} It is best to make the rice the day before, or at least several hours before. This will allow time for the rice to be flakey. It also helps to fry better. In a skillet sprayed lightly with non-stick spray. Add Canola oil, just enough to cover the bottam of the pan. Start the onions to fry. Add can of chicken, I pinch up the pieces as I add them into the onions. Break 2 eggs in the center of the pan, racking back the meat & onions.Just as the yellow starts to harden, break up with a wooden spoon. Mix the ingredients in the skillet altogether. Fold in the Rice to the mixture, 2 heaping spoonfulls at a time. You do not stir, you turn over the rice with other ingredients. Add a dash of Soy sauce. You will continue this poceedure until all the rice has been used. From time to time, you might need to add more opil, but you don't want it to be too greasy. Last you add the mixed veggies. Again fold into the mixture.Top with a lid, turn the heat down to low and simmer. Check to be sure rice is not sticking to pan.

    This dish can be made with or If you do not have mixed veggies, a can of corn & peas taste great in it, as well. without meat. And the meats is your choice of kind. Green onions can also be used to make more colorful. Try it, you will like it!
