Made famous in our state capital, at Springfield's old Leland Hotel (although everyone wants to say THEY invented it). The secret is the cheese sauce! I miss them when I travel, they're popular in all the restaurants here in Illinois.

Ingredients For horseshoes

  • CHEESE SAUCE
  • 1/2 lb
    butter
  • 1 Tbsp
    salt
  • 1/4 to 1/2 lb
    flour
  • 1/4 tsp
    cayenne pepper
  • 1/4 tsp
    dry mustard
  • 1 qt
    plus 1 cup milk
  • 3 Tbsp
    worcestershire sauce
  • 2 1/2 to 3 lb
    shredded cheddar cheese
  • 1 pt
    beer, warm

How To Make horseshoes

    Melt butter in stockpot and add flour to make a rue. Add milk. Add Cheese and rest of ingredients exept the beer. Stir the cheese sauce constantly, careful not to burn. Add the beer just before serving.

    TO SERVE: Toast 2 pieces of Texas Toast bread. On each slice, put on meat of your choice ( a hamburger patty on each slice, shaved ham, turkey, roast beef or anything you can think of). Pile onto the meat and plate the freshly made french fries (I prefer more narrow crinkle cut). Pour the cheese sauce over the "shoe" and serve it right away!
