hoppin john (slow cooker)

This is a classic southern US dish of black eyed peas and ham served over rice or even as a side dish. To dress this up, I added what I had in my fridge, bell peppers, celery, and bacon, delicious! I cooked the beans from dry the day before, and cooked chicken the day before as well for the broth.

Ingredients For hoppin john (slow cooker)

  • 3-4 c
    cooked ham, bite size pieces
  • 1
    onion, diced
  • 3 can
    or 6 cups cooked, black eyed peas, drained
  • 2 3/4 c
    chicken broth or stock
  • 3 clove
    garlic, minced
  • 1/2 tsp
    cayenne pepper
  • salt and pepper as desired
  • cooked rice, for serving, if desired
  • 300 g
    smoked bacon, chopped, optional
  • 1
    red bell pepper, diced, optional
  • 1
    green bell pepper, diced, optional
  • 1 stalk
    celery, diced, optional

How To Make hoppin john (slow cooker)

    Drain the beans and add to your slow cooker. I used cooked dry beans.

    Add remaining ingredients to your slow cooker. I added red and green bell peppers, celery, and bacon as variants as well as homemade chicken broth.

    Give the pot a stir then cover and set to Low setting for 4 to 6 hours but anything past 8 hours and the beans will be really soft.

    Stir the pot once an hour. Here it is at 4 hours, and it is perfect.

    Serve over rice for a main dish or serve as is without rice as a side dish. Enjoy.
