I found this recipe in a magazine years ago and is now one of my husband's favorite recipes to make and eat.

Ingredients For ham & potato quiche

  • 14 1/2 oz
    can sliced potatoes, drained
  • 1
    frozen 9" deep-dish pie shell
  • 3
    eggs
  • 1 c
    milk
  • 1 1/2 c
    shredded nacho or taco cheese
  • 6 oz
    chunk baked ham, chopped, about 1 1/3 cups

How To Make ham & potato quiche

    Place baking sheet on center rack in oven; preheat oven to 375'F. Layer half of potato slices in bottom of pie shell. In bowl, lightly beat eggs; stir in milk, 1 cup cheese, ham, 1/2 tsp. salt and 1/4 tsp. pepper. Pour half of egg mixture over potatoes in shell. Layer remaining potato slices, then pour over remaining egg mixture. Sprinkle with remaining 1/2 cup cheese. Place on hot baking sheet. Bake 40-45 minutes or until set and cheese is lightly browned. Let stand 20 minutes before serving. If desired, sprinkle with sliced scallions.
