This is a nutritious & tasty dish. Quick & easy to make too. Considered a main course with Feta cheese or without (during Lent) which many Greeks follow. Could also be served as a side dish with fish or small beef burgers.

Traditionally served with lemon. In northern parts of Greece, it is also cooked with chopped tomatoes. The leeks and white wine are my touch to the traditional "Spanakorizo." This dish is just as delicious served hot, warm, or room temperature.

This is my recipe & so is the picture. Give it a try. Hope you enjoy it as much as we do.

Blue Ribbon Recipe

Spinach shines bright in this full-flavored dish. Spinach is sauteed with a mixture of onions and leeks. It's then simmered with white wine and rice. Rice helps to make the dish heartier and a great vegetarian main meal. It would make a delicious side dish too, though, alongside steak. There's a hefty amount of dill which brings Greek flavor to the dish. Serve with a twist of lemon and a sprinkle of Feta for a healthy dish. Test Kitchen Avatar The Test Kitchen

How to Make Greek Spinach & Rice "Spanakorizo"

Step-by-Step

  1. Heat olive oil in a wide shallow pot, over medium-high heat.
  2. Saute the onions, spring onions, and leeks until translucent (about 5 minutes).
  3. Add spinach and stir for a few minutes until wilted.
  4. Add the white wine if using.
  5. Sprinkle in the rice.
  6. Add the warm water and season.
  7. Reduce heat to low and simmer for about 20 - 25 minutes until rice is tender. During cooking stir the "spanakorizo" once or twice and check liquid is absorbed. If so add one more cup of hot water, if necessary.
  8. Add dill before the end of cooking and stir gently to wilt. Add lemon juice to suit your liking.
  9. Remove from heat and drizzle remaining olive oil. Serve with lemon slices and crumbled Feta cheese (omit if fasting or vegan).
