This is a nutritious & tasty dish. Quick & easy to make too. Considered a main course with Feta cheese or without (during Lent) which many Greeks follow. Could also be served as a side dish with fish or small beef burgers. Traditionally served with lemon. In northern parts of Greece, it is also cooked with chopped tomatoes. The leeks and white wine are my touch to the traditional "Spanakorizo." This dish is just as delicious served hot, warm, or room temperature. This is my recipe & so is the picture. Give it a try. Spinach shines bright in this full-flavored dish. Spinach is sauteed with a mixture of onions and leeks. It's then simmered with white wine and rice. Rice helps to make the dish heartier and a great vegetarian main meal. It would make a delicious side dish too, though, alongside steak. There's a hefty amount of dill which brings Greek flavor to the dish. Serve with a twist of lemon and a sprinkle of Feta for a healthy dish.

Ingredients For greek spinach & rice "spanakorizo"

  • 3 Tbsp
    olive oil
  • 1 lg
    onion, finely chopped
  • 3
    green onions, finely chopped
  • 3
    leek leaves, thinly chopped, only white part
  • 3 lb
    fresh spinach, washed, stems removed & coarsly chopped
  • 1/3 c
    medium grain rice
  • 1/2 c
    white wine
  • 1 c
    warm water
  • salt & freshly ground pepper, to taste
  • 1/2 c
    dill, finely chopped

How To Make greek spinach & rice "spanakorizo"

  • Heating oil in a pot.

    Heat olive oil in a wide shallow pot, over medium-high heat.
  • Sauteeing onions, spring onions, and leeks until translucent.

    Saute the onions, spring onions, and leeks until translucent (about 5 minutes).
  • Spinach added to the pot.

    Add spinach and stir for a few minutes until wilted.
  • Adding white wine.

    Add the white wine if using.
  • Sprinkling in rice.

    Sprinkle in the rice.
  • Adding water to the pot.

    Add the warm water and season.
  • Simmering the spinach and rice.

    Reduce heat to low and simmer for about 20 - 25 minutes until rice is tender. During cooking stir the "spanakorizo" once or twice and check liquid is absorbed. If so add one more cup of hot water, if necessary.
  • Adding dill to the spinach.

    Add dill before the end of cooking and stir gently to wilt. Add lemon juice to suit your liking.
  • Drizzling olive oil over the spinach.

    Remove from heat and drizzle remaining olive oil. Serve with lemon slices and crumbled Feta cheese (omit if fasting or vegan). Kali Orexi = Good Appetite
