Growing up in a family of 8, Mom stretched a penny until Mr. Lincoln had a headache, especially since payday in the military was only once a month. One of our favorite meals was one that most people don’t eat much anymore: sauerkraut and some kind of meat. It was often hot dog “coins,” but leftover pork was also delicious, as was kielbasa (Polish Sausage). There are LOTS of ways to fix sauerkraut, so here are some suggestions. =^..^=

Ingredients

  • some meat, see step 1 for ideas
  • about 32 ounces sauerkraut, canned or bagged
  • OPTIONS
  • some brown sugar
  • some chopped apple
  • some applesauce
  • some chopped onion
  • some extra spices? see step 4.

How To Make fried sauerkraut

  • Step 1
    Decide on some kind of meat to fix with the sauerkraut. Hot dog coins (or minced), leftover cooked pork, kielbasa, bratwurst slices, or corned beef are all good choices. If you think of something else you enjoy, please let us know in the comments. Heat up a skillet with a little cooking oil and warm up and/or brown the meat.
  • Step 2
    While the meat is cooking, decide if you want to use or drain the sauerkraut brine. This is purely a personal choice. Some feel the brine is so tart that it is drained, and some even rinse the sauerkraut before cooking it. Whatever you decide to do with the brine, add it or not with the sauerkraut to the cooked meat.
  • Step 3
    Next, taste the kraut and decide if it needs to be sweetened. If so, popular additions are a little brown sugar, some chopped apples, or a little applesauce. Many like to add a little chopped onion, too. You could also add apple and onion to the meat in Step 1.
  • Step 4
    Some people also like to add a little extra seasoning if the sauerkraut is too bland for them. The most popular is caraway seeds, but other choices are mustard seeds, red pepper flakes, or garlic.

    How long you heat up the sauerkraut depends on whether you just want it warmed up or if you want it fried and crispy. I’m more of a slightly crispy kind of girl.

    Serve and enjoy! As a kid, I would take yellow mustard on the point of a knife and dot every hot dog coin before eating. A squirt bottle of mustard would have been a big help! =^..^=
