Another recipe from my Middle Eastern friends, tweaked slightly by me over the years, but still faithful to the basics of it.

Ingredients For chelow kebab

  • 1 1/2 lb
    ground lamb (beef can be used)
  • One md
    yellow onion, grated
  • Two clove
    garlic, chopped or smashed
  • One pinch
    dried dill
  • One dash
    pepper (or lemon pepper)
  • One dash
    salt or garlic salt (or powder)
  • Two lg
    plum tomatoes, sliced lengthwise
  • 1 1/2 c
    sliced mushrooms
  • cooked rice; i prefer white

How To Make chelow kebab

  • 1
    Mix ground meat, spices, onion, and garlic in a mixing bowl. Form meat mixture into cylindrical patties. Place on broiler pan and place in stove and broil.

    When the tops of the patties are starting to brown, sprinkle the mushrooms around the patties and continue to broil.

    Just before you are ready to serve, place the plum tomatoes, inside down on top of meat, and broil for a few minutes more, making sure that the tomatoes do not burn. Serve over rice.
