I think I got this recipe from Mr Food, it's super good and a wonderful diversion from pasta. Kinda like gnocchi but without the potatoes. Wow your family and guest...make some today!!!!!!!!

Ingredients For cheese dumplings, italian style

15 ozwhole milk ricotta cheese

2eggs, lightly beaten

1egg yolk, lightly beaten

3/4 cgrated parmesan cheese

3/4 tspsalt, divided

1/2 tspblack pepper, divided

1 call purpose flour, plus a little for dusting

1 stickunsalted butter
-
1 Tbspchopped fresh parsley

2 clovegarlic minced
How To Make cheese dumplings, italian style

1In a large bowl combine ricotta, eggs, egg yolk, Parmesan cheese, 1/2 tsp salt, and 1/4 tsp pepper; mix well. Add 1cup flour, and stir just to combine and mixture forms a ball. (Mixture will be soft).

2Dust baking sheets with flour, drop a half tsp or so of dough onto baking sheet in an oval shape. Replete will the remaining dough, (should make approximately 60) Lightly dust with flour.

3In a large pot of boiling salted water drop about 15 dough balls, when they rise to the top, cook another 4mib and remove using a slotted spoon. Replete till all remaining dough balls are cooked.

4In a large skillet over medium heat melt butter, add dumplings, parsley, garlic and remaining salt and pepper. Cook 5-6 min or until dumplings start to brown, stirring occasionally. Serve immediately with a little extra Parmesan cheese and or with a lite marinara sauce.
