Ingredients For carnival corn dogs

  • 1 1/4 c
    unbleached all-purpose flour
  • 1 c
    cornmeal
  • 2 Tbsp
    granulated sugar
  • 2 tsp
    baking powder
  • 1/2 tsp
    ground himalayan sea salt
  • 1 lg
    free-run egg, beaten
  • 1/2 tsp
    garlic powder
  • 1/2 tsp
    onion powder
  • 1/2 tsp
    smoked paprika
  • 1 1/2 c
    buttermilk
  • 10
    hot dogs
  • 10
    wood or bamboo skewers
  • canola oil, for frying

How To Make carnival corn dogs

    In a medium bowl, whisk together flour, yellow corn meal, granulated sugar, baking powder and ground sea salt; whisk until well blended. Add beaten egg, garlic powder, onion powder, smoked paprika and buttermilk. Whisk very well until smooth and no lumps. Transfer into a tall glass or container; sit for 30 minutes.

    Meantime, skew sausage and pat dry. Place flour in a fine sieve and dust over the dogs. Line a baking sheet with paper towels and set aside. Pour oil in a tall pot such as an asparagus one. Heat over medium-high heat until thermometer reads 350ºF.

    Dip dog in batter and let excess drip off. Quickly place in the hot oil and hold it for 15 seconds or so to prevent from sticking to the bottom. Cook for 5 minutes or until golden. Transfer on paper towel to remove any excess oil.
