This is a nice combo. Pears and Brie have been paired up for a long time.
If you decide to make this, be sure to include the dipping sauce, it really makes this sing.
Footnote on this is that this is the dish that sent me to Vegas in 2012 to the World Food Competition.

Ingredients

  • 2 slice
    sourdough bread
  • 3 tsp
    softened butter
  • 4 oz
    brie, sliced in 4 slices
  • 1
    ripe pear, peeled and sliced
  • 1 Tbsp
    apricot preserves
  • 1 Tbsp
    potato chips, crushed
  • ·
    dipping sauce:
  • 2 tsp
    each, apricot jam and sweet hot thai chili sauce

How to Make Brie, Pear and Apricot Sammie with Sweet Thai Dipping Sauce

Step-by-Step

  1. Spread softened butter on each slice of bread.
  2. Spread the preserves on one of the unbuttered sides.
  3. Arrange brie on one unbuttered side, and top with desired number of pear slices.
  4. Crush potato chips and put on top of sammie.
  5. Grill on med low heat until brie is all melted and bread is golden.
  6. Mix up dipping sauce, it's just equal amounts of hot sweet Thai chili sauce and apricot preserves. This really makes the sandwich sparkle.
